Lemon Bars

Buttery Shortbread Crust + Delicious Lemon Filling = Some Mouthwatering Lemon Bars

Ingredients: (makes about 20 bars)
*For the Crust*
-1 3/4 cups of All-Purpose Flour
-2 sticks of butter (cold)
-1/4 cup of Corn Starch
-1 cup of Powdered Sugar
-1 tsp. of Salt
*For the Lemon Filling*
-6 Eggs
-2 3/4 cups of Sugar
-2/3 cup of All-Purpose Flour
-2/3 cup of lemon juice
-2 tbs. of lemon zest

Step 1: Make the crust. After covering your pan with aluminum foil and spraying it with nonstick cooking spray, combine flour, sugar, corn starch, and salt together in a food processor. Pulse for a few seconds. Cut the butter into about 1/2 in. slices and add into the food processor. Pulse for about 15 seconds until mixture is like coarse meal. Sprinkle mixture into pan and press down firmly about 1/2 inch thick. Bake at 350 degrees for about 15-20 minutes.
Step 2: While the crust is baking, start on the lemon filling. In a large bowl, mix together the eggs, sugar, lemon juice, lemon zest, and flour. Mix until there are no more flour lumps.
Step 3: Once the crust has finished baking, take out of oven and pour in the lemon filling. Return the pan back to the oven for about 30-35 minutes or until the top is set and firm.
Step 4. Let lemon bars cool until room temperature once out of the oven. Cut into squares and serve plain or with confectioner's sugar.

If you are looking for a lemony dessert to make, lemon bars are the thing for you. If it wasn't for my friend Phoebe, and her story of lemon bars, I would not have dug into making these. Although lemon bars are incredibly good, they can be very sweet and making a whole batch of them may be too much. If you are only going to make these for yourself or a few people, it may be best to make half the amount this recipe calls for.
