In-crepe-able Crepes

A sweet, thin like pancake that can be served with various toppings from sweet to savory.

Ingredients: (makes 8-10 crepes) *Batter*
-2 large eggs
-1 1/2 cups of flour
-1 1/2 cups of milk
-1/3 cup of sugar
-1 teaspoon of vanilla
-1/2 teaspoon or a pinch of salt
-4 tbs of butter (for when cooking)
*Toppings* - whipped cream -fresh fruits (ex.bananas,berries) -sauces (ex.chocolate,caramel) -anything else you'd like
Step 1. In a large bowl, combine your eggs,milk, sugar,and vanilla. After well incorporated, add in your flour and salt, combine.
Step 2. Cover the batter and chill for at least an hour or you can leave it overnight. If you do not have time, it is okay to just go ahead and start making the crepes without chilling it.
Step 3. On a medium,non-stick pan, have it on medium heat and add a bit of butter to the pan. After melted, ladle a scoop of batter onto the pan. How much batter you put in depends on the gadget you use, but it should be about 1/4 cup or batter.
Step 4. As soon as the batter is in the pan, immediately start swirling or tilting the pan to the sides to get an even coat on the bottom. Cook the crepe until some dark spots appear or until the edges are golden brown and crispy and bubbles rise on the surface on both sides.
Step 5. Place crepe onto a plate to cool or keep warm with tinfoil. Continue repeating the process until all the batter is gone.
Step 6. Serve with fresh fruits or other toppings and enjoy!
NOTE: If you chill you batter, make sure you stir the mixture once again before cooking.
I've always been fond of crepes because in my family it was a special treat we didn't have very often. Who knew they were so easy to make and not that hard to make them taste delicious? On my first few tries in making the crepes, I added too much batter and didn't get it evenly on the bottom resulting in a thick, oddly shaped crepe. It still tasted great but it wasn't the best at holding all the toppings and looks so make sure you are moving quick! Once you have the base batter,you can even add in some cocoa powder or hot cocoa mix into your batter for a fun chocolaty twist. Have fun and enjoy!

I added about 1/3 of a hot cocoa packet into the batter. It turned out to be this color and had the chocolate flavor in it without being too sweet.
