Mini Chocolate Cupcakes

Bite-Sized Chocolaty Cupcakes

Ingredients: 
(makes about 3 dozen cupcakes)
-1 cup of Sugar
-1 cup of All Purpose Flour
-7 tbs. of Cocoa Powder
-1 tsp. of Baking Powder
-A pinch of Salt
-2 Eggs
-1/2 cup of Milk
-1/2 Cup of Vegetable Oil

Step 1: Preheat your oven to 350 degrees and either grease or add cupcake liners to your cake pan.
Step 2: In a large bowl, combine your flour,sugar,baking powder, cocoa powder, and salt together. Whisk until well incorporated.
Step 3: Mix your wet ingredients (eggs, milk, and oil) and add into the dry ingredients. Mix it all together well. 
Step 4: Using a mini ice cream scooper, scoop in one scoop of batter or pour batter about 3/4 of the way up. Put into oven and bake for about 15 minutes once batter is all gone. Make sure to watch the cupcakes before the 15 minutes is up to prevent from over cooking. Cool for about 10 minutes and enjoy with frosting, powdered sugar, jam, milk, or even eat it plain.

NOTE: 1. You can use this same recipe for making regular cakes by simply pouring the batter into a different cake pan/mold. 
2. If you like having more of a chocolaty flavor in your cakes, you can add a few more tbs. of cocoa powder for that flavor. You could also make chocolate frosting for the cake.

Recently many special occasions have come up in my family where making some sort of dessert seemed necessary in a way. This chocolate cake recipe is delicious , easy to make, fast, and it you won't have a huge batch of cupcakes for when you just have a small occasion worth celebrating and don't want too much cake . You can make cake pops, cupcakes, regular cakes, and many other using this recipe. As an example, for my mom's birthday, I used the same recipe to make her a small heart shaped cake to celebrate.
